In the meantime, in the Bosa kitchens, chef Luigi Panini is completing the cooking of "Geozuppa": a soup of legumes and vegetables from local cultivars, with the presence of a spontaneous plant closely related to the carbonate bedrock: the "Saint Viano Cabbage".

Another geological curiosity is the lamb cooking on a plate of "Oven Stone" (a kind of "Soap Stone" of the Apuan Alps).

The highlight of the afternoon is reached with the  presentation and tasting of the special wine produced in the Geopark Farm, at 850 m above sea level. This area has not previous winemaking tradition, but it is potentially interested by a future development of cultivations due to global warming.
The new wine is presented by the winemakers Andrea Elmi and Gian Luca Guidi ("Maestà della Formica" company).

The first bottles produced after the harvest of 2013.
The wine has the same name ("Enjology") of the Workshop.
The label shows a detail of the oldest Geological Map of this area, designed by Carlo De Stefani in 1878.

In the first part of the field trip, lead by Giuseppe Ottria, the participants crossed the Apuan Alps by bus from Castelnuovo di Garfagnana to Levigliani, from east to west, from the Tuscan Nappe to the succession of the Apuan Alps metamorphic.
